Mexico is not the first destination on the premium coffee map, but the El Jaguar Washed SHG scoring over 84 on the q grade will soon change this attitude.

After a blind taste test here at The Roastery, everyone thought this was a new fruity, sweet full bodied blend that Jamie had just created. The whole team were thoroughly impressed. The El Jaguar has very distinctive intense, yet complementary characteristics with lower than expected acidity levels. We feel it works in all brew methods….a must for espresso drinkers.

El Jaguar comes from Siltepec, in the centre of the Ciapas province near the southern border of Mexico. There, in the mountains of the Sierra Madre, this coffee is grown. The area borders an ecological reserve known as El Truinfo, which protects some of the most precious plant and animal life in Central America.

Being near to the equator, this part of Mexico benefits from year-round hot weather, allowing for coffee to be cultivated at high altitudes in much the same way that it is in more famous coffee-producing parts of the world, like West Africa. This specialty lot has been processed using the washed method, and then sun-dried.

Harvested and processed by small producers under traditional farming methods, shade grown coffee, craft de-pulped, fermented, washed and sun dried. This method creates a unique cup starting with some dark chocolate notes with the aroma. A round body, spice and caramel flavour balanced with subtle lemon grass acidity. With fruity tangerine notes, this combines to create a unique cup and delightful experience.
